First Bean-to-bar Chocolate by Cult de Choco

非常興奮首次由可可豆製造朱古力,因炒好嘅可可豆唔多,不能存放大久,所以都要磨住先,呢張相已磨了一個小時了,香味四溢。實驗性地研磨了約六小時,道個Bean-to-bar Chocolate (大約95%, Ben Tre, Vietnam) 終於製成,因炒豆及研磨時間不足,所以丹寧酸非常高,質感較軟易溶但不夠幼細,尾後有果仁風味。

So excited the first time to make chocolate from cacao bean. It’s the experiment and preparation for the workshop later. After roasting and conchinng (around 6 hours), finally finish the bean-to-bar chocolate sample, still taste the tannins strongly and a note of walnut. Wanna to tray?
