Friis-Holm Chocolate is an artisanal company who operates through an agrarian perspective in tune with sustainable values: micro ecology of place, single origin native cacao varietals and  a direct trade model. The company is based in Denmark where Mikkel Friis-Holm and his family live and manage the business.

Our chocolate is an expression of the relation between native varietals, land and culture in place. Just as a winemaker values the terroir for his wine, we seek to expose the value of terroir for cacao. Our ongoing pursuit is to merge this connection and therefore create a truly unique and delicious experience of chocolate.

我們的朱古力帶出當地品種、土地和文化的關係,就像釀酒師從風土衝量其酒,我們則尋求展示風土在可可上的價值。我們不停地追尋這種關聯,以致創造出真正獨一而美味的朱古力。

Friis-Holm chocolate is part of an international body called Direct Cacao, an interdisciplinary grassroots organization that brings together people in the chocolate and cacao domain from farmers to chocolate makers and journalists. This body collectively supports directly sourced and ecologically cultivated fine cacao. Mikkel Friis-Holm is a co-founder who chairs for improving trading models within the structure.

Friis-Holm朱古力是一個名叫「直接可可」(Direct Cacao)國際團體的一份子;這誇越性組織連繫於朱古力及可可豆範疇的農民、朱古力製造商及新聞工作者參與其中。同時,它亦支持直接採購及具生態學栽培優秀可可。Mikkel Friis-Holm是創辦人之一,負責在團體架構下促進貿易模式。

A dark milk chocolate made purely with Nicaraguan cacao beans: Chuno and Rugoso. Fruity, spicy and creamy with an intense cocoa finish. 牛奶黑朱古力使用了尼加拉瓜Chuno 和Rugoso的可可豆製造。帶有水果和香料風味,質地像奶油一樣柔滑,並有強烈可可餘韻味道。

 DM65 Dark Milk Chocolate – Nicaragua 65% Cacao
Made from six different cocoa variety indigenious to Nicaragua. A powerful mix of dark and milk. Tasting notes: A creamy start followed by a cinnamon-spicy dark berry caramel – ending in a powerful chocolaty finish and a refreshing bitterness in the back of the mouth.用了六種不同尼加拉瓜土生土長的可可豆品種,是牛奶及黑朱古力的強烈混和。品嚐初段像奶油一樣柔滑,隨後有著肉桂香料及黑莓焦糖的風味,最後以豐富的朱古力味在口腔內留有一點甘苦。

A cocoa tree originally found in small volumes in as single farm in Northern Nicaragua. Very fruity and pleasant acidity. Notes of grapes and raisins. Long smooth aftertaste. 在尼加拉瓜北部的一個農莊所有的一種少量可可樹。極有果香,帶有葡萄及葡萄乾似的味道,並有著長而順滑的餘韻。

 Rugoso70 Rugoso 70% Cacao
Bitter classic dark chocolate. Almost brutal in the beginning but quickly changing into beautiful plum notes and pleasant tannins. This is a chocolate that will age well. 傳統苦味黑朱古力,初嚐是不討好的風味,但很快轉成洋李般味道及味道不錯的丹寧酸。這款是可作陳年佳上般享用的朱古力。
 ChunoDT70 Chuno 70% Cacao
Criollo/Trinitario variety we found on three isolated farms in Northern Nicaragua growing at 300-800meters altitude. Possible grandfathers of Venezuelan Criollo.  Full body, nutty, black olives, spicy and complex. Very smooth finish.  The beans have bean turned gently twice during the 5-day fermentation, producing pronounced nutty characteristics and spicy taste notes. For a more straight dark chocolate flavor with extra acidity, try our triple turned Chuno.

Straight almost simple, classic chocolate flavor. Good pronounced acidity. Distinct notes of black olives and citrus-peal. The beans have been turned three times during the 5-day fermentation, producing an incredibly dark, intense, even acidic bitterness.  Bara70 Barba 70% Cacao
The trees are host to fantastic crawlers giving the illusion of beards on the trees – hence the name Barba. Very powerful cacao notes mixed with pepper and cinnamon. 可可樹寄居了有趣的爬蟲類,令到好像長滿鬍鬚似的,所以名明為barba。強烈的可可風味,加上胡椒及玉桂香料的調子。

Made with beans from 10 growers in The La Dalia Region of Nicaragua. They grow a mix of our single bean varieties, but also add pods from unknow old heritage trees growing in their orchards – and they refuse to sort the pods when they harvest! Although we usually encourage separate fermentation, this mix works a unique magic, one of the best we have ever tasted.
